It is processed soybean. That’s what it is folks. It’s great as tofu, a decent plant protein. But it’s not meat.
Tofu is a good source of plant protein, and can be quite versatile if you’re willing to take the time. Still, tofu delivers noticeably less protein per serving than most meats. Firm tofu has roughly 8–10g of protein per 100g, while chicken breast comes in around 31g, beef around 26g, and even fattier cuts of pork reach 20–25g. So you’d need roughly 2–3 times the volume of tofu to match a typical meat serving’s protein content.
Meat also is a “complete” protein with an excellent amino acid profile, and it’s highly bioavailable — your body absorbs and uses a large fraction of what you eat. Tofu (soy, let’s say it) is also a complete protein — one of the very few plant foods that qualifies as such. Its amino acid profile is reasonably good, though slightly lower in methionine. Bioavailability is somewhat lower than meat but still among the best of plant proteins.
Which ….is why I am decidedly NOT a vegan. The amount of beans and tofu you’d need to eat to keep your musculature and bone density synthetic proper heft, is considerable. You can get there? But why. (And you’ll all recall this content creators told she had osteopenia/ osteoporosis and needed to increase her bone density stat —- which she did, by dramatically upping the amount of soy and beans she’s eating, and taking up heavy weights. Yeesh.)
